Harvested June 27th, 2020 — Tirage juice harvest July 19th, 2021 Bottled July 20th, 2021
The day before bottling we destemmed and crushed the 2021 Tempranillo and separated about 30 gallons of juice. This juice was blended with the 2020 base wine and then immediately bottled. A second fermentation, in the bottle, has left the wine carbonated."
