Tastes like the Mediterranean and sunsets. Savatiano is the grape behind retsina, but there's no pine in this one: a dry, light white at 11.6% from organic vines on Evia, wild-fermented in steel with nothing added but a little sulfur. Chill it down, pour a glass and pretend you're on a Greek island.

About the Winemaker

Nikos Mitzifiris is a third-generation vigneron and winemaker on the Lilantine plain of Evia, Greece's second-largest island, where the ancient cities of Chalcis and Eretria fought one of Greece's first civil wars.

The estate has been certified organic for more than 20 years, and Nikos has never used commercial yeast in the winery. Alongside local whites like Savatiano, he's one of the champions of Vradiano, a rare red grape from around Chalcis.

Farming & Cellar: Certified organic vines planted in 1992 on sandy, well-drained clay, sprayed only with sulfur and copper and picked by hand. Free-run juice only, no skin contact, wild-fermented in stainless steel for about 20 days, then four months in steel. Natural clarification with a light filtration; the only addition is a little sulfur.
