About the Winemaker
Domaine La Mutine, founded in January 2022 by Jean-Paul Pando in Vézelay—Burgundy's newest AOC in the picturesque Grand Auxerrois region—represents 2.5 hectares dedicated to organic viticulture. Here, Pinot Noir, Chardonnay, and the rare Melon de Bourgogne (grown on just 7 acres in all of Burgundy) flourish in an unspoilt environment where pesticides are banned in favor of a nature-friendly approach.
Jean-Paul Pando, the visionary winemaker behind the estate, has forged his passion through an atypical path. Originally from Provence after an initial career in catering, he moved into viticulture, working first in Provence and then in Margaux while completing his BTS in Viticulture-Oenology. After obtaining his diploma, he worked in Meursault before fulfilling his dream of establishing his own domaine in northern Burgundy's Vézelay appellation in 2022.
Farming & Cellar: The estate spans 2.85 hectares over 5 distinct climats. Work includes grassing between rows, hand-topped vines, superficial soil work, and pruning respecting sap circuits—all certified organic. Grapes are hand-harvested in 32-liter crates with selective sorting. In the cellar, only indigenous yeasts are used, sulfur is applied sparingly, and wines remain unfiltered. Labels are a collaboration with Geoffroy Pithon. The result: wines that elegantly celebrate the little-known terroirs of northern Burgundy.
