About the Winemaker
Celler Les Foes is a small natural wine producer based in Les Coves de Vinromà, in the Plana Alta comarca of Castellón province, Spain. "Foia" refers to the hollows and depressions formed by erosion in this dramatic landscape of the Valencian Community.
Roger Díaz is the winemaker behind Les Foes. A history professor by day in Castellón, he makes the daily journey to tend his family's vineyards. With his wife Laia, he cultivates terraced plots of vines interspersed among olive and carob trees—a traditional Mediterranean polyculture landscape.
Farming & Cellar: The vineyards hold certified organic Macabeo, Garnacha, Monastrell, and the rare indigenous Embolicaire (Trepat) on red iron-rich soils with maritime influence. Roger farms with ecological principles—cover crops, minimal tillage, only sulfur and copper when necessary. Wines ferment spontaneously with native yeasts, undergo natural malolactic fermentation, and are bottled unfined, unfiltered, with no sulfites or additives.
US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at noon in order to be picked up from our distributors and out on Wednesday's delivery truck.
