About the Winemaker
Doric Wines is a remarkable Greek winery located in the mountainous Koniakos region at 800 meters elevation, founded by Giorgos Balatsouras. The estate is known for its unique winemaking traditions, including fermentation with fir branches.
Giorgos Balatsouras revived ancient Greek winemaking techniques at Doric Wines, most notably the practice of fermenting wine with fir branches (Retsina-style). This centuries-old tradition, combined with the extreme altitude of the vineyards, creates wines unlike anything else in the modern wine world.
Farming & Cellar: At 800 meters elevation, the vineyards experience significant temperature variation that concentrates flavors and preserves acidity. Giorgos farms traditionally without synthetic inputs. The signature technique involves adding fir branches during fermentation, imparting subtle resinous notes. Wines are made with wild yeasts and minimal intervention, bottled to capture Greece's ancient winemaking heritage.
US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at noon in order to be picked up from our distributors and out on Wednesday's delivery truck.
