About the Winemaker
Azienda Agricola COS was founded in 1980 by three university friends: Giambattista Cilia, Giusto Occhipinti, and Cirino Strano—the C, O, and S that give the winery its name. Located in Vittoria, southeastern Sicily, COS has become one of Italy's most celebrated natural wine producers.
In 1980, the three founders were the youngest wine producers in Italy. They received an old family cellar from Cilia's father and began with just 3.6 hectares. More than any other producer, COS is credited with rescuing Cerasuolo di Vittoria from near extinction—when it became Sicily's first and only DOCG in 2005, COS had already spent 25 years championing the wine.
Farming & Cellar: COS farms biodynamically following Rudolf Steiner's principles. Their groundbreaking innovation came in 2000 with "Pithos"—wines fermented and aged in buried terracotta amphorae, inspired by ancient Georgian qvevri. Today the cellar holds over 150 amphorae, one of the world's largest collections. Fermentation is spontaneous, and wines are made with minimal intervention.
US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at noon in order to be picked up from our distributors and out on Wednesday's delivery truck.
