But do not let it fool you, as this well aged, Petite Sirah opens up, it will take your taste buds on a satisying ride. The wine is destemmed, macerated for 10 days in fiberglass, and then filled into new barriques where it spends the next 4 years with a few racks between.

About the Winemaker

Anders Frederik Steen is a Danish winemaker based in Valvignères, a village in the southern Ardèche whose Roman name—Vallis Vinaria—means 'valley of the vine.' He began making wine in 2013 after training as a sommelier in Copenhagen, starting at Noma, then running the wine program at Relæ and its bar Manfred's, building one of the first all-natural wine lists in Denmark.

Anders learned winemaking alongside nomadic producer Jean-Marc Brignot before settling in the Ardèche with the help of Gérald and Jocelyne Oustric of Domaine du Mazel—godparents of the local natural wine scene. His wife and collaborator Anne Bruun Blauert works alongside him. Anders also vinifies grapes from the Bannwarth family in Alsace directly in their cellar, believing it's part of the terroir and cannot be separated.

Farming & Cellar: They farm 4 hectares organically and biodynamically on clay-limestone soils, feeding the earth with seawater and herbal preparations. Estate fruit is rounded out with grapes from Le Mazel and the Bannwarths. 'Nothing added. Nothing taken away' is his motto. Fermentation happens outdoors, driven entirely by indigenous yeasts. Each cuvée carries a poetic name and is made only once—'Don't Throw Plastic in the Ocean, Please,' 'Let's Eat the World We Want to Live In.' No two wines are ever repeated.

US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at noon in order to be picked up from our distributors and out on Wednesday's delivery truck.
