About the Winemaker
Carboniste is a modern California sparkling wine project founded in 2017 by Dan and Jacqueline Person, proving that California bubbles don't need to emulate Champagne—they need to taste like California sunshine.
Dan Person was a pre-med student before pivoting to wine, studying at UC Davis and working at Domaine de la Romanée-Conti before spending three years as assistant winemaker at Schramsberg, Napa's prestigious traditional sparkling house. Jacqueline Person made still wines across California terroirs. Together they questioned why domestic sparklings were all homages to Champagne, and launched Carboniste to discover what California could do differently.
Farming & Cellar: Carboniste shortens en tirage aging to just three months, uses crown caps instead of corks, and lets California fruit speak for itself. Sourcing from the Sacramento Delta's Gomes family (organic, dry-farmed Albariño), Corralitos in the Santa Cruz Mountains, and cold-climate Marin County, the wines capture varietal expression and terroir without the brioche and butterscotch of extended yeast contact.
US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at noon in order to be picked up from our distributors and out on Wednesday's delivery truck.
