A still, barrel fermented Riesling from 2021, fermented on skins for 15 days. Pressed and left to continue fermenting in a single oak puncheon. Aged in glass 1 year before release.

About the Winemaker
Ibi Wines is the natural wine label from Revel Cider, a Guelph, Ontario-based fermentory founded in 2014 by Tariq Ahmed. Ibi extends Revel's wild fermentation philosophy to hybrid and vinifera grape wines, all made with the same spontaneous fermentation and minimal-intervention approach.
Tariq Ahmed, a Plant Science graduate, founded Revel as Ontario's youngest-ever cidery owner. The Ibi label emerged from his passion for characterful native yeast fermentations, applying the same wild fermentation principles to grapes that made Revel's ciders distinctive. The project works with varieties including Seyval Blanc, Muscat Ottonel, Riesling, Zweigelt, Vidal, and Blaufränkisch.
Farming & Cellar: Grapes are sourced from small, organically cultivated plots across Ontario. Wines are skin-macerated, wild-fermented, and bottled unfined and unfiltered with minimal sulfur (as low as 15ppm, often zero). A signature technique is extended aging on apple pomace and grape marc, protecting wines from oxidation while adding texture and salinity. The result is wines that are, in Tariq's words, 'complex enough to contemplate, but easy enough to sip.'
US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at noon in order to be picked up from our distributors and out on Wednesday's delivery truck.
