Vineyard info:

Up to 10 vineyards – certified organic or practicing similar farming.  Average vine age = 35 years.  AVAs include: Columbia Gorge, Willamette Valley, Elkton, Dundee Hills, Rogue.

Production

  • Early Muscat & Gewurz skin contact 3-24 hours.
  • Riesling = partial skin contact – 3 hours.

Big Salt is a co-fermentation rather than a blend – meaning we allow mother nature to create complexity rather than attempting to blend the wine after the fact.  Starting in mid Sept, we pick Gewurz that is then soaked on the skins then pressed to tank.  As that juice begins to ferment, we incorporate Early Muscat, followed by Riesling, then an additional pick of Gewurz, followed by Pinot Blanc and Riesling.  Big Salt is the culmination of the myriad of climates Oregon vineyards have to offer in each vintage.

Wine

2021 Big Salt erupts from the glass with a mélange of citrus – bergamot, flamed lemon, sweet grapefruit.  Salty white tea aromats are interlaced with pithy lemon before a waft of alyssum hits your senses.  Classic Big Salt on the palate – racy acidity combined with beeswax-y textures before finishing dry.

Big Salt pairs well with fish tacos, pesto chicken pasta, pad thai…or just chilling.

About the Winemaker

Established in 2011 by Ksenija and John House, Ovum was founded in hopes of producing Oregon white wines that are honest reflections of time and place. Our low intervention production method is a commitment to letting the vintage and vineyard shine, not the vintner. Fruit comes first - our top priority is finding farmers that share our beliefs, and then getting out of the way so their hard work can be tasted.

Native ferments, no subtractions or additions, except for SO2 - extended lees contact 8-9 months, for textural complexity. All of this is done in neutral barrels of acacia and oak, as well as cement egg and Austrian cask. Ovum is solely committed to the production of white wines, mainly Riesling, Gewurztraminer, and Muscat.

At Ovum, each wine is produced the same way - if the wine smells and tastes different, it has everything to do with terroir, and little to do with the winemaker. Our hope is that through our attention to detail and honest technique, we can produce...

 

Shipping Details

 US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at 10am in order to be picked up from our distributors and out on Wednesday's delivery truck.

Shipping cost is 18 bucks a box (up to 12 bottles) so we highly encourage picking up more than 1 bottle for the best value!

At $18, we have some of the most competitive shipping rates compared to other low-intervention wine e-commerce, which can range from $20-$25 a box. Ultimately, we eat the cost of shipping more often than not because wine can be damn heavy. As a small business, we are simply unable to offer free shipping. We can't thank you enough for your understanding
