Winemaker Notes: A tiny production grower Champagne with crispy orchard fruit, saline minerals and a bone-dry finish with hints of savory umami. Blanc de Blanc. Méthode Champenoise with liqueur de tirage from concentrated musts from her vineyards.
Pressing in Coquard basket press, alcoholic fermentation in used 228L Burgundy barrels, ten months aging in barrel.
