notes of crisp apples, lemon preserves, wet stone, fresh pineapple, yellow plum, and sometimes a whisper of roasted hazelnut. They are characterized by vibrant acidity and intense minerality.
Known for his experimental use of specific crystals during primary fermentation to impart "extra energetic vibrancy", Jason Ruppert practices conscious, regenerative farming and natural winemaking, utilizing native yeasts, spontaneous malolactic fermentation, and no sulfur additions.
