About the Winemaker
Vins Mercuriales, founded in 2022 in the Drôme Provençale near the Rhône river, is a natural wine négoce project by Antonin Roux and Aymar Carrol—a Parisian experimental music composer and a Marseille natural wine bar owner who evolved from DJ duo to vignerons.
Their passion for natural wine steadily evolved into a quest to make their own. After attending the inaugural BIM natural wine fair in Arles, they began incorporating natural wine into their Paris parties. Feeling the artist's urge to create, they staged with Martin Texier in 2019 and vinified their first micro-cuvées in demijohns. In 2022 they secured a cave by the Rhône river and debuted their official first vintage. Their approach combines artistic sensibility with minimal intervention—every detail thoughtfully considered.
Farming & Cellar: Operating as négociant-vignerons, they produce natural wines from purchased organically certified grapes sourced from the Northern Rhône and Loire, working with varieties including Syrah, Chenin Blanc, Chardonnay, Cinsault, Pineau d'Aunis, and Gamay. Grapes are hand-harvested at optimal ripeness with very low yields. All wines are fermented with indigenous yeasts, bottled unfined and unfiltered with no additives. SO? is used only when necessary, always under 10 mg/L.
US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at noon in order to be picked up from our distributors and out on Wednesday's delivery truck.
