About the Winemaker
Tenuta Demaio, located in San Severo in Puglia's Tavoliere delle Puglie, is led by Antonio Demaio—whose connection to agriculture is innate. His grandfather Domenico cultivated olives in Rignano Garganico in the early 1900s before moving to San Severo, passing down the love of olive and vine to Antonio's father, and eventually to Antonio himself. The estate tagline—'the natural color of wine'—reflects their commitment to authenticity.
From childhood, Antonio pruned olive trees and vines, harvested fruit, and made wine in the family's underground cellar (cantina ipogea), a traditional style once common in San Severo. Though cooperatives in the 1970s led him to pause winemaking while he became a professor and school director, he never abandoned his passion. In 2010, Antonio restructured an old masseria into the current winery. Since 2013, with help from his son-in-law Giovanni (also a wine lover), they began transforming grapes using biological and traditional methods.
Farming & Cellar: The estate consists of 35 hectares of olive groves and vineyards, certified organic since 2004. In the vineyard, they practice minimal phytosanitary interventions. In the cellar: spontaneous fermentation in steel (and barrique maceration for their orange wine), no clarification, no sterile stabilization or filtration, minimal sulfites—exactly as Antonio's father taught him, and as he now teaches his children. Native Pugliese varieties include Bombino Bianco and Nero di Troia.
