About the Winemaker
Wabi-Sabi Wine, based in Austria's Wachau and Danube regions, is a collaborative natural wine project founded on the Japanese Zen aesthetic concept where beauty is defined by imperfection and authenticity rather than manipulation.
The project emerged from a desire to understand whether and how it's possible to make "real, drinkable, low-intervention wines." Working with partner winegrowers who inspired the vision, Wabi-Sabi produces wines that express character and individuality—the antithesis of designed, sterile, laboratory wines. The founder believes that "doing nothing" is a misleading concept; instead, every action requires knowledge and purpose, from pruning to soil work to pressing. The unique hand-made artwork on real photographic paper—unreproducible and unique—reflects this philosophy.
Farming & Cellar: Grapes are sourced mainly from the Wachau valley and Danube region, with careful attention to ripeness and grape quality. The philosophy mirrors homeopathy—using contact substances rather than systemic treatments, respecting the vine's self-healing forces. Wines are aged in wooden barrels of various sizes (225-700 liters), unfined, unfiltered, with lively acidity and very low SO? (maximum 50 mg/L total). White labels are collaborative blends of 2-3 local varieties and vintages; black labels are exclusively estate-made wines from self-harvested grapes.
US Natural Wine ships once a week, every Wednesday. All orders should be placed by Tuesday at noon in order to be picked up from our distributors and out on Wednesday's delivery truck.
