Wines to open, pour, and let change in the glass over a long evening. These have more depth and texture than your average weeknight bottle, so they reward a little patience: deep orange wines, fuller whites and a few reds that keep opening up.
Mersel Wine's Phoenix Skin-Contact and Elevate Merwah Amber are a great one-two of Lebanese orange wine, and Nikolas Juretic's Toc di Montone and Domaine Hughes-Béguet's Jeu de Rolle go even deeper. For whites, Domaine Bärtschi's Coup de Foug Blanc is Altesse and Jacquère from the Alps, and Oxymore's Songe Éveillé is a Jura Chardonnay and Savagnin. For red, Kyra Winery's Sev Areni from Armenia and Les Lampyres' Une Autre Histoire take their time. American Wine Project's Summerland is a skin-contact Brianna from Wisconsin.
Serve these a little warmer than you think, give them air, and pour small. They get better as the night goes.
